Cookie Pie

1 recipe of your favorite crispy pie dough (pate sable)

2 eggs
1/2 c. all-purpose flour
1/2 c. sugar
1/2 c. finely packed brown sugar
1 c. butter, melted and cooled
6 oz. chopped chocolate

Preheat oven to 325 degrees.

Line tart pans with dough and set aside.

In large bowl, beat eggs until foamy. Add flour and both sugars. Beat until well blended then mix in melted butter. Stir in chocolate. Pour into pie shell. Bake at 325 degrees for 1 hour.

    I never expected to be so taken with these because I am not that huge a fan of either cookies or pies, but together is a whole different story!
